 Ham Casserole

Title: Ham Casserole

Description:
I just finished making dinner and thought I'd share.   This is one of my girlies favorite meals, and one I tend to make earlier in the day, and then just pop in the oven around dinnertime.   It's best with real ham, but since we only have that around Easter and Christmas lunch meat works too.

Ingredients:
1/4 C and 2 Tbsp butter or margarine
1/4 C flour
2 C milk
1 C grated cheese (I add closer to 2 cups)
3-4 medium potatoes, cooked and sliced
1 can (16 oz.) peas
3 C diced cooked ham
1 C bread crumbs (I use the Italian ones)


Directions:
(The directions don't say this, but I start by peeling, slicing and boiling my potatoes - I guess you could use leftover baked potatoes, but I never have.)   Arrange potatoes in greased 9x13 dish.   Cover with peas.

In a saucepan, melt 1/4 C butter.   Add flour, then milk, stirring constantly until thickened.   Slowly add cheese, and cook until melted.   Pour half the cheese sauce over potatoes and peas.   Add ham, then remaining sauce.

Melt remaining butter; mix in bread crumbs.   Sprinkle over casserold.   Bake 30-35 minutes at 350 degrees.

   If I remember, I also sprinkle a little seasoning salt over the cooked potatoes before adding the peas.   But I usually forget, so the girls sprinkle it on themselves once it's all cooked.
