  Chicken Tortilla Soup

Title: Chicken Tortilla Soup

Description:
Originally served at Irene's.

Ingredients:
2-3 lbs fresh or frozen chicken
1 C   chopped onion
1/2 tsp olive oil
1 T bottled lime juice
1/2 tsp minced garlic
1/2 tsp chili powder
1/4 tsp ground cumin
2 cans (4 C) chicken broth
1 C salsa
1 C frozen corn
1 can black beans
tortilla chips, shredded cheese, sour cream


Directions:
Microwave chicken to defrost.   Heat oil in soup pot.   Chob chicken in bite size chunks and add to pot.   Cook for 2 min on high.   Add onions, lime juice, garlic, chili powder and cumin.   Cook till chicken is done.

Add broth, salsa, corn and beans and mix.   Cover pot and bring to boil - reduce to med high and boil 10 min.

Crush chips in soup bowl, ladle on soup, top with cheese and sour cream.

I (Mom) boil a 3 lb chicken and use the leftover water for the chicken broth-it doesn't have to be a full 4 cups because I make up for it using picante sauce.   I use plenty of picante sauce instead of salsa to my liking and I love more cumin.   I also like to add kidney beans.

   We have a yummy recipe similar to this, but we just throw it all in the crockpot and add fresh cilantro at the end.   Cilantro...mmmmm.

   We usually don't put in so much chicken, but it definitely makes it heartier.   I bet the addition of fresh cilantro "bams it up a bam" (that's a Tim quote--he's making fun of Emeril).

   We say "bam!" every time we add it.
