Title: cheesy jalepeno cornbread

Description:
I'm suppose to make this in a dutch oven for the ward party but I tried it in the oven for the family and they love it!

Ingredients:

1 can corn drained
1 can cream style corn
(I just used a bag of frozen corn partially drained with 2 Tblsp flour and 1/2 c milk added and boiled to make the cream corn. )
1 8 oz pkg jiffy muffin mix
1 C sour cream
1/2 c butter/marg melted
2 C shredded cheese (1 in batter and 1 on top after baking a while)
1 7 oz. can ortegas or jalepenos


Directions:
Mix together and pour in well greased oven dish or dutch oven.   Bake 350 20 min or until knife comes out clean when poked in the center.   Add cheese on top and bake another 5 or so min until cheese is melted.

If you are doing it dutch oven style put dutch oven over 9 hot coals and top lid with another 12-14 coals.   Every 15 min turn the lid and pan a quarter turn to cook it evenly until 45 min is up.   Blow off ashes around the edge of lid.   Open top and add rest of cheese.   Cover and ad a few more hot coals to the top (4-6) and give it another 10 min. until cheese is bubbly.   There's a youtube video on it if you want to take the time to look it up under dutch oven corn casserole.

You can also find a copy cat version of jiffy mix.   here's one:
2/3 C flour
1/2 c cornmeal
3 Tbl sugar
1 Tbl baking powder
1/4 tsp salt
2 Tbl oil
