Title: Sweet Pork
Description: Shredded sweet pork that goes great in burritos, on tostadas and in salads. I think it's best when served with the Cilantro Ranch Dressing.
Ingredients: 16 oz jar of salsa 2 c. brown sugar 12 oz can Coke (diet, caffeine free, whatever you choose)
Directions: Place 6-8 pound pork loin roast in a crock pot. Fill about half way up the side of the roast with water. Season as desired. Leave on low for 8-10 hours (overnight). In the morning, drain the water, slice the roast into thirds (smaller sections get the flavor better) and pour over the following sauce. Then cook for another 6-8 hours on low. Shred and keep warm until serving.

| Oh, I forgot to write the same thing I told Mom. I never did the overnight thing. I just cut the roast into smaller sections, threw all the ingredients in that morning, cooked it for 6-8 hours and then shredded it and threw it back in the crockpot shortly before serving it.
And yes, you probably are reading it wrong with the section about cooking it overnight. It tells you to fill the crockpot with water till its halfway up the side of the roast. There is a lot of moisture "created" when you cook in the crockpot. It won't get dry. I've done a pot roast recipe that only uses the roast, potatoes, and carrots, a can of cream of mushroom soup and dry Lipton soup mix (and a spice rub) with no other liquid, and it worked just fine. | | |
